I recently decided I was in the mood for a moon pie. But, instead of the kind you buy at the store, I wanted to try to make them. So, we did.

And it was actually quite fun to jump into the kitchen with my girls and do some baking. Plus, the homemade moon pie recipe actually turned out pretty good. Considering we did some guessing on ingredients along the way we were quite pleased.

cake mix cookies

The process is 2-fold so you will start with the actual cake mix cookie part.

Ingredients:

Directions:

  1. Preheat oven based on cake mix instructions. Line cookie sheet with parchment paper.
  2. Prepare cake mix per instructions EXCEPT add half the amount of water.
  3. Spoon batter onto lined cookie sheet. Use a circular motion to create round cookie and leave puffy. (Or create balls of dough. Drop on sheet. Flatten with glass.)
  4. Cook 10-12 minutes until done. Let cool.

Marshmallow Filling

Ingredients:

Directions:

  1. Beat confectioner’s sugar and butter until fluffy.
  2. Add marshmallow cream and vanilla and mix until well blended.

Once cake cookies have cooled, pair up tops and bottoms and prepare for marshmallow filling. Using a spoon or pastry bag, put filling onto the bottom of one cookie. Top with a second cookie to form a Moon Pie. Eat and enjoy!
