Warmer weather around here also means it is potluck season. You know, where everyone gets together and brings along a dish or two to share. We typically like to bring at least one side and a dessert… simply because I want to make sure there is plenty for me.
Vegetable Garden Dip
One delicious treat we have found that does well at both gatherings and at home is a Vegetable Garden Dip. Fresh vegetables, mixed with just a bit of SPLENDA® No Calorie Sweetener, Granulated, is perfect for dipping. I do enjoy knowing that SPLENDA® Sweeteners is versatile, and can be used in baking, cooking, and beverage mixing. This veggie dip is just one of the many ways we can use it.
Of course, the best part is that SPLENDA® Sweeteners offers the sweetness of sugar, without the calories. So, I can sweeten the vegetable dip just enough that the kids even enjoy the flavor. Being able to encourage them to eat more veggies is always a win in my book. Plus, the recipe is pretty simple and the finished dip is creamy and full of fresh flavors.
- ½ cup sour cream
- 3 oz. cream cheese
- ¼ cup mayonnaise
- ¼ cup green bell pepper, chopped
- ¼ cup radishes, chopped
- ¼ cup cucumber, unpeeled, chopped
- ¼ cup onions, chopped
- 1 tbsp SPLENDA® No Calorie Sweetener, Granulated
- pepper, to taste
After chopping all the vegetables, simply mix everything in a large bowl and cover. Chill for at least an hour for full flavor. Serve with fresh baby carrots, cauliflower florets, broccoli or another favorite vegetable great for dipping. The blend of flavors creates a lively pop of deliciousness once it all comes together.
