Jungle Mango Shortcake in a Jar Recipe
Mangos are naturally sweet and pair well with almost any flavor. By adding a key ingredient such as mango, family meals and snacks can be much more exciting. Plus, mangoes are nutritious and provide 100% of your daily vitamin C, 35% of your daily vitamin A and 12% of your daily fiber. Not to mention, a one cup serving is just 100 calories!
Mango Shortcake in a Jar
During our recent The Jungle Book movie watching party, we tried three mango recipes that were a hit with the kids. But, I believe the favorite was the Jungle Mango Shortcake in a Jar. The sweet taste of the mangos, added to a Greek yogurt mixture, and layered over Angel Food Cake was the perfect flavor combination. Since they are available year-round, you can make this recipe in any season.
Ingredients:
- 1 cup nonfat Greek yogurt
- ½ tbsp honey
- 1 cup cubed store-bought angel food cake
- 2 cups cubed ripe mango
- 4 glass jars (8 oz)
Directions:
- Mix the cup of Greek yogurt and the honey in a small mixing bowl until evenly combined.
- Pour cake cubes into bottom of jar. Position to form a solid layer.
- Add a layer of mango cubes and then top with a dollop of the Greek yogurt mixture.
- Repeat layers to top of jar. Serve and enjoy!
Simple, right!? And a delicious blend of eccentric flavors.
