Easy Cheesy Chicken Quesadillas are one of our favorite family meals. You get bread, meat and dairy in one bite. Plus, add a side of corn salsa and you have a serving of veggies too.

A homemade chicken quesadilla or black bean southwest quesadilla makes for a nice balanced meal that takes less than 10 minutes to prepare, cook and serve.

How to make Chicken Quesadillas:

Ingredients:

  • Grilled Breast Strips (diced)
  • Shredded cheese (we use the Fiesta Blend)
  • Tortillas (the smaller sized ones are easier to manage when cooking)
  • Corn salsa (optional)

Directions:

  1. Spray pan with non-stick cooking spray and pre-heat over medium heat.
  2. Place tortilla into pan and top with a layer of cheese and diced chicken. Add another layer of cheese and top tortilla.
  3. Let brown for 3 minutes (or until melted) and carefully flip.
  4. Brown other side of quesadilla for another 3 minutes. Gently press to blend all of the ingredients together.
