National Chocolate Day

Ok, what greater food holiday could there possibly be besides National Chocolate Day? Whomever came up with that one was a genius! Seriously! Chocolate is my guilty pleasure. So delicious and yet so bad. I love chocolate flavored coffee, candy, covered nuts, and all by itself. Celebrating a day that is all about chocolate is quite simple to do! It gave us the perfect idea for our “Welcome Home” celebration for my oldest daughter after she had been gone all week. She came home Saturday {National Chocolate Day} and we made an awesome Chocolate Frozen Yogurt Pie to welcome her back!

Since she was coming in late we had plenty of time to run to the store to grab the ingredients. I decided I wanted to make the brownies from scratch and made sure I had my recipe for those. I then searched for ideas on how to build the pie and found several great ones. I kept thinking back to the great-tasting brownie bottom pies you often find t restaurants and went with that idea. I had my list and was ready to head to Walmart to grab what we needed. The ingredients were easy and the kids were excited about helping put it all together.

Once at Walmart we found a nice selection of TCBY frozen yogurts. We were on the search for the Chocolate Chocolate. Yes, a double dose of the cocoa bean deliciousness! It is a low fat chocolate frozen yogurt filled with real dark chocolate swirl and chocolate chunks. So much chocolate! It is amazing. Anyways, we found the items we needed, as we typically do at our local store, grabbed a few other items for the brownies and for the week, and were ready to begin making our pie.

Making the brownies from scratch was simple and the girls enjoyed licking the bowl. Once the brownies were baked and had a chance to cool, we were able to layer the pie and let it chill over night before my daughter and her boyfriend arrived home on Saturday. It was such a hard wait because we were all ready to just eat it all without them. But, after spending time listening to all of their stories we surprised them both with the Chocolate Frozen Yogurt Pie. It was mouth-watering and the perfect treat for them after record-breaking summer temps in the states they had just traveled through. For the rest of us, it was fun to listen to their stories as we sat and enjoyed the delectable dessert. We cannot wait to make it again and share it with others next time. Well, maybe… if there is any left. Hmmm… there is an “Ice Cream Social” coming up in a few weeks. This might make a splendid treat to take to that event. Now I am excited all over again. Look at how effortless the recipe truly is.

Chocolate Frozen Yogurt Pie

Ingredients

  • ⅔ cup butter
  • 1 ¼ cups sugar
  • 1 cup unsweetened cocoa powder
  • ¼ tsp salt
  • ½ tsp vanilla extract
  • 2 large eggs
  • ½ cup all-purpose flour
  • 1 pint TCBY Chocolate Chocolate Frozen Yogurt
  • Whipped Topping
  • Caramel Syrup

Directions

  1. Preheat oven to 325°F.
  2. Combine butter, sugar, cocoa, and salt in a heatproof bowl.  combine dry ingredients with butter
  3. Set in a skillet of simmering water and stir until butter is melted. Mixture should be smooth and hot. Remove bowl and set aside until warm. Set in a skillet of simmering water
  4. Stir in vanilla extract. Add eggs separately, stirring after each one.
  5. Add flour after mixture becomes thick and well-blended. Beat well with a wooden spoon or rubber spatula. Stir until well blended
  6. Bake 20-25 minutes on until toothpick emerged in center of brownies is slightly moist with batter.
  7. Let brownies cool completely.
  8. Place scoops of softened frozen yogurt on brownie and spread evenly. Place in freezer for 10-15 minutes to firm.
  9. Spread whipped topping over frozen yogurt and drizzle caramel syrup. Freeze over night.
  10. Cut and serve.

Now, I added caramel because, for me, it always goes with chocolate. You could also try different toppings such as chocolate shavings, candies, fruit, or whatever you may desire.
