Y’all, it’s HOT! The dog days of summer in Texas means triple-digit temperatures and we find creative ways to stay cool and refreshed. Fortunately, Vive Mejor ice cream brands not only keep the kids happy, but keep us all cool from the inside out.

Strawberry Shortcake Ice Cream Cupcakes

Finding new ways to enjoy our favorite ice cream simply adds to the fun of eating it.

For example, we have 5 of our 8 birthdays that fall between June and September. These are all warm months in our part of the country. We have been known to forego birthday cakes in order to just get to the best part — the ice cream!

Since my birthday is one of those we celebrate during the summer, I decided to combine the two (cake and ice cream) for a new version of another favorite dessert: Strawberry Shortcake.

Again, with the heat I keep mentioning, ice cream melts quickly here. By freezing a scoop of Breyers ice cream onto half of a cupcake, it seems to hold out a bit longer. Well, actually, I don’t know. I eat these ice cream cupcakes so quickly I guess I haven’t really tested that theory.

The combination of flavors makes me want to pretty much devour the strawberry treat without stopping to take a breath.

Yet again, when eating cold, smooth Breyers ice cream, you may not want to go too fast — brain freeze is real, my friends!

Let’s talk about how to make these Strawberry Shortcake Ice Cream Cupcakes so you can give them a try and see what I mean. Staying true to my quick and easy way of doing things, I started with a box of strawberry cake mix.

There are some things I cook from scratch, but in a hot kitchen with 100°F+ temperatures outside, I am all for using the least amount of energy and heat. Therefore, make the cake mix per the instructions on the box.

Line a muffin pan with cupcake liners and then pour about 1 tablespoon of the cake mix into each one. Bake according to instructions on the box and let cool.

Once cooled completely, add a scoop of Breyers Homemade Vanilla (or another rendition of the flavor, such as Breyers Natural Vanilla) to each cupcake and press firmly into the liner. Freeze for at least 2 hours.

Once ready, top each cupcake with whipped cream and a strawberry slice or two. You are now ready to serve and enjoy your delicious Strawberry Shortcake Ice Cream Cupcakes with friends!
