It is no secret that I have a sweet tooth. I try to fight it, but to no avail. Pretty sure I get it from my dad, who gets it from his mom. So at least I come by it honestly. And there are some desserts I simply cannot do without.
Sopapilla Cheesecake
After tasting a Sopapilla Cheesecake at a friend’s house several years ago, I was hooked. It’s absolutely delicious, and according to recent surveys, the #1 searched dessert in Texas.
That has to say something for the cream cheese, cinnamon concoction. I know that I can’t get enough when it’s in my presence.
Plus, this crescent roll Sopapilla Cheesecake is easy to make and quite tasty to boot! Get out your baking supplies and let’s get cooking:
Ingredients:
- 2 cans refrigerated crescent rolls
- 2 packages (8 oz each) cream cheese, softened
- 1 ½ cups sugar
- 1 tsp vanilla
- ½ cup butter, melted
- 1 tbsp ground cinnamon
Directions:
- Preheat oven to 350°F. Prepare baking dish (9″ x 13″).
- Unroll 1 can of dough and cover bottom of baking dish. Stretch to fit and firmly press into dish to close seams.
- Beat cream cheese and sugar at medium speed with an electric mixer. Add vanilla and dash of cinnamon (optional). Spread the cheese mixture over dough in dish.
- Unroll the second can of dough and carefully roll onto cheese layer. Be sure to pinch up those seams!
- Melt butter and pour over top layer. Combine remaining sugar with cinnamon and sprinkle evenly over melted butter.
- Bake 35 minutes or until center is set. Cool. Cut. Enjoy.
The end result is a delicious recipe with a creamy cheese filling wrapped in a sweet cinnamon crust. Refrigerate the dessert after serving.
