Ingredients

  • 2 sausage links
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 4 carrots, coined

  • 1 can navy beans, rinsed
  • 4 cups chicken broth
  • 2 cups water
  • 4 cups of kale, stems removed, torn into small pieces
  • salt & pepper to taste

Instructions

    1. In a large pot or Dutch oven, cook sausage over medium heat until it is no longer pink. Drain any excess fat and remove the sausage from pan. Set sausage aside.
    2. Add olive oil to the pan and heat on medium. Once the oil is heated, add diced onions and carrots to the pot. Saute the veggies until they are translucent and tender. Sprinkle flour over the veggies and saute for one minute longer. This will help thicken the soup.
    3. Pour chicken broth and water into the pot and add sausage back in. Let the sausage simmer for 20 minutes to incorporate its flavors into the broth. Add beans and kale and season with salt and pepper to taste. Cook for another 5 minutes and serve.
