Baked Chicken Nachos

Baked Chicken Nachos

Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

Ingredients

  • 1 medium red pepper, sliced
  • 1/2 tsp canola oil
  • 1 can black beans, rinsed and drained
  • shredded rotisserie chicken
  • 2 cups Sargento® Fine Cut Shredded 4 Cheese Mexican blend
  • tortilla chips
  • minced fresh cilantro
  • guacamole (optional)

Instructions

  1. Sauté red peppers in canola oil for 3 minutes then transfer to a small bowl and set aside.
  2. In the same skillet, sauté the beans in remaining oil for 3 minutes or until heated through.
  3. Layer tortilla chips in bottom of a casserole dish. Layer chicken, cheese, red pepper, and cilantro over chips and repeat.
  4. Bake uncovered at 350° for 15-20 minutes, or until heated through. Enjoy with a side of guacamole!
