Easy 3-Ingredient Mexican Migas Breakfast

Growing up, I remember going to my Juelita’s house with my dad before school. While my dad would read the paper at the table with my uncle, we would join Juelita in the kitchen as she cooked. She was always cooking. Breakfast, lunch and dinner. And it was fabulous every time.

One of my favorite recipes was her Mexican Migas. She had a way in the kitchen that made everything taste incredibly amazing.

Watching her taught me patience, as well as the art of cooking. She made it an art.

Now, I enjoy teaching my kids in the kitchen. They love the idea of helping and I enjoy having them alongside me in the kitchen for company.

And what a better way to celebrate Día del Niño all month long than with your child in the kitchen?

Now back to the Mexican Migas.

My Juelita would spend most of her day in the kitchen. Nowadays, with my full-time gig, busy kids, and travel, we don’t always have that luxury.

But, it doesn’t mean we can’t make a fabulous breakfast with the time we have! Herdez® Salsa Casera makes it super easy to make Mexican Migas in 10 minutes!

Mexican Migas with Herdez

Cut a few corn tortillas into squares and drop into a skillet lined with oil. Brown to desired crispness. Fluff eggs in a bowl and then pour into skillet with tortilla strips.

As eggs begin to cook, add Herdez Salsa Casera and continue to scramble until done. Serve. That’s it.

10 minutes and you can have a nice, warm Mexican Migas breakfast on the table. Plus, the kids can help with each step of the way (although mine avoid the browning).

  • Olive oil
  • Corn tortillas
  • 6 Eggs
  • 1 small can Herdez Salsa Casera


  • Cover bottom of skillet with olive oil. Cut corn tortillas into bite-size squares and drop into skillet. Brown until desired crispness.
  • Fluff eggs in a bowl and then pour into skillet with tortilla strips.
  • Add 1/2 can of Herdez Salsa Casera.
  • Scramble until eggs are fully cooked.
  • Serve with side of warm corn tortillas and Herdez Salsa Casera.
