Lemon Cake Bites Paired with Snapple Half and Half

The weather we have been having in Texas this summer has actually been amazing. We have only reached 100° a few times. Much better than the several days in a row that we normally have. That means that we have been able to spend a lot more time outside too. We have gone to a drive-in, the splash park, and a new community park we really enjoy. The shaded space underneath the covered pavilion makes for the perfect picnic area with a few Snapple summer drinks.

Lemon Cake Bites

The park has been specially developed to be an all-inclusive play area. Meaning, it incorporates special needs children. The entire play area is wheelchair accessible and there are so many great sensory activities to do. Therefore, Monkey has such an amazing time there and never wants to leave. So, we decided to meet up with our teenagers there and enjoy a picnic together as a family.

We had a gift card for sub sandwiches, but still needed drinks and desserts from Walmart. I wanted to try something different for dessert and walked through the aisles of the store brainstorming. Colby and I found the cutest little forks that we decided we needed to have. Along with a small, plastic container with a lid… we needed something to go inside. Yes, we totally picked what the dessert would go in before we chose what we were making.

Drinks were easy. The south is known for its sweet tea and lemonade. Both are iconic summer drinks. We were thrilled to find a delicious-tasting combination of them both in Snapple Half ‘n Half.

Snapple Half and Half

We perused the baking aisle and formulated a plan. I was excited to get home and see how it turned out. The real test would come when we shared the new creation with the kids. Colby helped me prepare the dessert, Lemon Cake Bites, the night before and we put them in the fridge to chill overnight.

Once at the park, the kids ate their sandwiches, but were soon off to play. Even the teenagers. The merry-go-round, teeter-totter, and cool swings were too much to keep them away. So off they went. And I could not resist the swings. They are so comfy!

After a little time in the sun, everyone came back to sit and enjoy their dessert and have a drink. Luckily, we had plenty of Snapple Half and Half drinks on hand. Once everyone had some time to cool off, we passed out the perfectly, portable dessert cups. Each cup had its own little Lemon Cake Bite inside… along with the cute little forks.

They were a hit! Paired with the sweet taste of tea and lemonade blended together, they were an excellent way to cool off after some time in the Texas sun.

Lemon Cake Bites Recipe

Ingredients:

  • 1 box white cake mix
  • 1 12 oz. can of 7Up
  • lemon frosting
  • lemons
  • Cool Whip

Directions:

  1. Combine cake mix and 7Up together in a bowl and mix. Bake cake according to directions on box.
  2. Let cake cool and, using a spoon or ice cream scooper, scoop cake into containers.
  3. Gently press into bottom of containers.
  4. Layer with lemon frosting.
  5. Add a layer of Cool Whip and then garnish with lemon zest, slices optional.
  6. Place lid. Chill. Serve with a bottle of Snapple Half and Half.
