One of my favorite quotes states that “Not all those who wander are lost,” (J. R. R. Tolkien). Colby and I love to travel and do so often. We include our children as much as possible and, after next month, they will have traveled from coast-to-coast just in the last 6 months. We are flying them (on Southwest, by the way) to Los Angeles to join us for a road trip to Oregon and then back home through Salt Lake City! We truly believe they learn more and make amazing memories when we travel.
Fly Away With Me
Fortunately, Southwest Airlines offers flights all over the United States. Unfortunately, as much as travel with our children, we cannot take my entire family along on each trip. Therefore, we thought it would be fun to host a “Fly Away With Me” party for our friends and family who support us from home. We asked them to consider where they would fly with Southwest if they had the opportunity and then made fun recipes to represent the locations.
When I asked my kids for two locations, they chose Florida and Texas and we narrowed it down from there. We also decided to get creative with Ritz Crackers recipes and to have a little fun with our choices. Even though our home base is Dallas, San Antonio is our favorite Texas city to visit. Therefore, we chose a super easy recipe to represent the “southwest” flair of the city. Tex-Mex, spicy foods, and bright colors all remind us of San Antonio, so a Raspberry Chipotle Sauce served over cream cheese was the perfect representation!
Plus, it literally takes three ingredients: raspberry jam, chipotle peppers, and cream cheese. Combine ½ cup of raspberry jam with ¾ chipotle pepper (finely chopped… and adjust amount to taste) in a bowl and then spoon over a block of cream cheese. Serve with Ritz Crackers and enjoy! This is my absolute favorite topping on my Ritz Crackers and love how simple it is to make. You can have it ready in no time when you have last minute guests or need a quick party appetizer.
Next, because of our fascination with Florida, we made a sweet and salty Key Lime Cheese Ball. Creamy, sweet and tangy in the inside, with a Ritz-encrusted outside for an amazing flavor pop. With flights to a variety of Florida cities, the key lime choice was based on Ft. Lauderdale. And, both of our recipe creations were a hit with the family!
