Chocolate Mint Brownies Recipe with Half the Calories

As I began to peruse the internet searching for a great recipe I kept going back to the same things: brownies. I am not sure what my fascination has been with them lately… but this is our second time in the past few days to make them. Only this time we tried something different. Not only do these brownies include a subtle mint flavoring… they are also made with a pure cane sugar that is half the calories of regular sugar.

Chocolate Mint Brownies

Chocolate Mint Brownies Recipe


  • 1 cup butter
  • 6 tbsp cocoa
  • 2 eggs, beaten
  • ½ cup C&H Light
  • ½ tsp. salt
  • 1 tsp. vanilla
  • ½ tsp. mint extract
  •  ½ cup all-purpose flour
  • 1 cup confectioner’s sugar {optional}


  1. Preheat oven to 350°F. Lightly grease pan and set aside.
  2. Combine 6 tbsp of cocoa and ½ butter in a metal bowl. Simmer water in a skillet and set bowl with mixture into water. Stir until butter is melted and blended.
  3. In another bowl, mix beaten eggs, C&H Light sugar, salt, vanilla, and mint extracts until well combined. Mix in flour.
  4. Add butter and cocoa batter to the mixture. Blend well.
  5. Pour into prepared pan and bake 20-25 minutes until slightly moist.
  6. Let cool and then sprinkle with confectioner’s sugar or other topping of your choice.
