BBQ Chicken Salad Recipe with KC Masterpiece


Do summer days mean BBQ season for you? They most definitely are around here. I mean, we do live in Texas. We barbecue as often as we can… in any other weather.

But, sometimes I don’t really feel like burgers or hot dogs. I want a salad that can fill me up. That’s when we break out a few greens and add delicious BBQ chicken to the recipe. It is, by far, my favorite recipe!

Those that know me well, know that I actually love the BBQ sauce more than the foods it goes on. My mom often caught me eating all of the sauce before she could get it on the meat.

I simply could not help myself.

KC Masterpiece barbecue sauce

Ingredients:

  • 2 pounds of boneless chicken breasts (cut into strips)
  • ¾ cup KC Masterpiece® Kansas City Classic barbecue sauce
  • ½ buttermilk
  • 1 egg
  • 3 cups flour
  • vegetable oil
  • bacon
  • lettuce
  • spinach
  • carrots, shredded
  • bell peppers, sliced
  • red onion, sliced
  • cherry tomatoes
  • 2 cups corn
  • shredded cheese
  • Ranch dressing

Directions:

  1. Cut each chicken breast into strips, rinse and set aside.
  2. Whisk KC Masterpiece® Kansas City Classic barbecue sauce, buttermilk, and egg together in a bowl.
  3. Heat vegetable oil in a large skillet over medium heat.
  4. Pour flour into a shallow dish. Dip each chicken strip into flour and then into bbq sauce mixture. Turn over to coat thoroughly.
  5. Fry 3-4 strips at a time until golden brown. Drain and then slice into bite-size pieces.
  6. Dice bacon into small pieces and cook in skillet 6-8 minutes. Remove and let dry.
  7. Place the vegetables into a large bowl and toss well.
  8. Add salad greens to a plate and top with chicken strip bites. Sprinkle with shredded cheese and homemade bacon bits, if desired. Top with Ranch dressing and more KC Masterpiece® Kansas City Classic barbecue sauce.
  9. Serve and enjoy!
